Ingredients
  

  • 1 sheet Puff Pastry
  • 4 tbsp Pesto
  • 1 cup Cherry tomatoes
  • 1 Egg white (coconut oil or plant-based milk vegan alternative)

Instructions
 

  • Preheat your oven to the temperature of your pastry puff's requirements.
  • Lay your puff pastry sheet flat and cut into 4 equal pieces. If you are using a puff pastry block of dough, allow it to thaw as indicated on the package and then roll it out to their specification. Mine allowed for a 12-inch square.
  • Pierce the center of each square with your fork in multiple spots.
  • Put roughly one tablespoon of pesto in the center and spread it out in the center area
  • Place your cherry tomatoes on top of the pesto
  • Fold the edges to make roughly a 1 cm edge. You can press gently down if the edges are not staying folded.
  • Brush your beaten egg whites onto the crust (optional step but will give a nice touch)
  • Bake as directed on your pastry package. If using the Tenderflake brand, it's 15-20 minutes until golden.
