- 1 sheet Puff Pastry
- 4 tbsp Pesto
- 1 cup Cherry tomatoes
- 1 Egg white (coconut oil or plant-based milk vegan alternative)
Preheat your oven to the temperature of your pastry puff's requirements.
Lay your puff pastry sheet flat and cut into 4 equal pieces. If you are using a puff pastry block of dough, allow it to thaw as indicated on the package and then roll it out to their specification. Mine allowed for a 12-inch square.
Pierce the center of each square with your fork in multiple spots.
Put roughly one tablespoon of pesto in the center and spread it out in the center area
Place your cherry tomatoes on top of the pesto
Fold the edges to make roughly a 1 cm edge. You can press gently down if the edges are not staying folded.
Brush your beaten egg whites onto the crust (optional step but will give a nice touch)
Bake as directed on your pastry package. If using the Tenderflake brand, it's 15-20 minutes until golden.
