AMAZING GUACAMOLE AND EGG TOAST

This Guacamole & Egg Toast recipe is deliciously flavorful. If you love avocado toast then you'll love the extra kick that comes from using homemade guacamole instead. Great for any meal of the day, this simple and quick recipe, is a great go-to when looking for a mouthwatering bite to eat.

Ingredients
  

  • 4 Ripe avocados
  • 1/2 cup Tomato
  • 1/2 Medium red onion
  • 1 Large jalapeno
  • 1 Lime
  • 1 tsp Cumin
  • 1/2 tsp Chipotle chili powder
  • 1/2 tsp Salt To taste
  • 4 Eggs
  • 1/2 tsp Trader Joe's Everything but the Bagel Sesame Seasoning Blend Per egg
  • 1-2 tbsp Olive oil Or oil of choice

Instructions
 

  • Seperate your avocados in half and scoop out the green flesh. Mash your avocado in the bowl using a fork. You can make it smooth or leave if it as lumps as you like.
  • Deseed your jalapeno and chop into small pieces
  • Slice and deseed your tomato. Then cut into small pieces.
  • Chop up your onion into small pieces as well.
  • Cut up your fresh cilantro (roughly one tablespoon worth)
  • Add everything to your bowl, add your spices and juice from your lime.
  • Salt to taste and add more chili powder if the jalapeno was not enough quick for you.
  • Fry up the perfect sunny side up, over-easy or poached egg. Add about 1/2 teaspoon of Everything seasoning to each egg while it's cooking.

Serving size

This guacamole recipe is enough to generously top 4-5 slices of bread.  

Left Over Guacamole

Keep your avocado pits and press them into your remaining guacamole. Seal your bowl with cling wrap and place in the fridge.
The pits will help keep your guacamole from darkening too much. You can additionally add a splash of lemon or lime juice to the top of your guacamole.
