EASY ROASTED GARLIC MUSHROOMS
I love a good roasted vegetable. And these easy vegan-friendly roasted garlic mushrooms are the perfect snack or side dish for your lunch or dinner menu.

HOW DO YOU MAKE ROASTED GARLIC MUSHROOMS
Making mushrooms in the oven is quick and easy and just requires a few simple minutes of preparation work.
For this recipe, I am using cremini mushrooms (also called Baby Bella’s), I get a nice big pack from Costo. You can use white mushrooms but they tend to give out so much water and water down the flavor. You would also need to roast them longer to get rid of that extra fluid.
- Peel, rinse, or wipe clean (choose your preference). Make sure you don’t soak your mushrooms. Get them nice and dry using a paper towel or clean cloth.
- Depending on the size, halve or quarter your mushrooms (I leave the stems as well).
- Add mushrooms to your cast iron pan or lined baking tray.
- Drizzle with oil, pressed garlic, salt, and pepper. Mix well all together.
- Roast for 20 minutes, mix once after 10 minutes.

Note: I’m using an oven-safe cast iron skillet but any lined baking sheet will also work. If you are interested in joining the cast iron world, here’s a great affordable option.
REFRIGERATING YOUR VEGAN ROASTED GARLIC MUSHROOMS
These mushrooms refrigerate well. Simply place them in a air tight container and keep refrigerated up to 3 days. I
love making a double batch and using them to snack on or adding them to easy lunches or dinners like my favorite Buddha bowls.
